When your cauliflower gnocchi is out, I got you. Homemade-Sweet Potato Gnocchi. Easy, delicious recipe perfect for a Saturday night!!! Enjoy this recipe & enjoy your day xoxo 💕💕💕 • • Ingredients: - 1medium sized potato baked or microwaved ( I baked mine at 400 degrees for 50 minutes. Do not boil) - 1 cup flour (I used @bobsredmill gluten free all purpose) - 1 tbs nutritional yeast - 1/4 tsp salt. • Directions: bake the sweet potato and peel away the skin. Mash the potato until smooth. Add the flour and rest of ingredients. And use your hands to knead it into a dough. Happens pretty quickly 45-90 seconds probably. Add a few tbs of flour on a clean countertop. Flatten the dough into a square and quarter it. Take each square and roll it into a “snake” of your desired thickness. Cut about 3/4 inch gnocchis out of the “snake”. • • Heat fat (I used @miyokoscreamery Vegan butter) on medium heat. Add sage and salt and gnocchis. Cook for about 6 minutes or until crisp.
